Tofu Scramble

Ingredients:

  • 1 onion
  • 1 red bell pepper
  • 4 sliced mushrooms
  • 2 T olive oil
  • 450 g (1 block) firm tofu
  • 1/4 t turmeric
  • 1/4 t paprika
  • 1 t onion powder
  • 1/2 t basil
  • 3 T parmesan
  • 1 t maple syrup
  • 3/4 cup milk

Instructions:

  1. Dry the tofu with paper towels
  2. Chop onion, bell pepper, and mushrooms
  3. Saute onion, bell pepper, and mushrooms in oil until softened
  4. Combine spices (turmeric through parmesan) in a bowl
    1. Add S/P
  5. Crumble the tofu into the pan and add the spices
  6. Add the milk and maple syrup and cook until thickened
