Rosemary Garlic Roasted Potatoes

  • 1 1/2 lbs small red or white-skinned potatoes (or a mixture)
  • 1/8 cup olive oil
  • 3/4 t salt
  • 1/2 t pepper
  • 1 T garlic (3 cloves or more)
  • 2 T rosemary (or more)


  1. Preheat oven to 400 degrees
  2. Cut the potatoes in half or quarters and place in a bowl
  3. Chop garlic and rosemary
  4. Combine potatoes with olive oil, salt, pepper, garlic and rosemary until well coated
  5. Dump the potatoes on a foil-lined baking sheet
  6. Roast in the oven for at least 1 hour, flipping twice while cooking
  7. Season with extra S/P to taste when finished
