Quinoa Tabbouleh

  • 1 cup quinoa
  • 2 T lemon juice
  • 1 garlic clove
  • 1/2 cup olive oil
  • 1 large cucumber
  • 1 pint cherry tomatoes
  • 2/3 cup parsley
  • 1/2 cup mint
  • 2 scallions


  1. Cook quinoa according to package instructions
  2. Mince the garlic
  3. Whisk lemon juice and garlic in a small bowl while gradually adding olive oil, then season with S/P
  4. Chop cucumber, tomatoes, parsley, mint, and scallions
  5. When quinoa is cooled, mix in 1/4 cup dressing
  6. Add cucumber, tomatoes, herbs, and scallions
  7. Add remaining dressing and season with S/P if needed
