Pasta with Turkey and Vegetables

  • 2 T olive oil
  • 1 lb ground turkey
  • 4-5 carrots
  • 2 small zucchini
  • 2 small yellow squash
  • 3-4 cups kale
  • 4-5 garlic cloves
  • 3 cups pasta
  • 2 T dried Italian seasoning, divided
  • 2 t cumin
  • 1 25 oz pasta sauce


  1. Heat water to boiling and cook pasta
  2. Heat 1 T oil in the skillet and brown the turkey (season with 1 T Italian seasoning and S/P), then remove
  3. While browning, chop carrots (set aside), zucchini/squash (set aside), and garlic/kale (set aside)
  4. After removing turkey, cook carrots for 5 minutes, until they begin to soften
  5. Add zucchini and squash for another minute or two
  6. Add kale and garlic until kale wilts and garlic is fragrant
  7. Add sauce, then turkey and pasta
    1. Mix as you add in handfuls of pasta
    2. Keep the heat low to avoid over-reducing the sauce, add water or chicken stock/broth if needed
  8. Add remaining 1 T Italian seasoning, S/P, and cumin
