Thyme-flavored Cauliflower Mash

  • 1 large head cauliflower
  • 1 1/2 cup chicken broth
  • 3 T olive oil or butter
  • 1 t chopped fresh thyme


  1. In a large pot, salt the chicken broth and bring to a boil
  2. Chop cauliflower into 1/2″ pieces
  3. Remove thyme leaves from stem, no need to chop
  4. Add the cauliflower and bring back to a boil
  5. Cover, reduce the heat to low and steam for 20 minutes
    1. Cauliflower should be very tender
  6. Use a slotted spoon to transfer the cauliflower to a bowl
    1. Try to have ~2T of the broth in the bowl
  7. Mash the cauliflower
  8. Add olive oil, thyme, and pepper
  9. Mix to combine
