Loaded M&M Oreo Cookie Bars

  • spray oil
  • 1/2 cup unsalted butter (1 stick)
  • 1 egg
  • 1 cup light brown sugar
  • 1 T vanilla extract
  • 1 cup all-purpose flour
  • 18 double-stuffed Oreo Cookies
  • about 1/2 cup pretzel, peanut butter, or regular M&M’s


  1. Preheat oven to 350 degrees
  2. Line a 8X8 baking dish with foil and spray with oil
  3. Melt butter
  4. Wait momentarily before adding the egg so you don’t scramble it
  5. Whisk in the egg, brown sugar, and vanilla until smooth
  6. Add the flour and stir until just combined, don’t overmix
  7. Coarsely break up the Oreos and stir them in
  8. Pour the batter into the pan, smoothing the top lightly with a spatula
  9. Evenly sprinkle the M&Ms over the top, lightly pressing them down with your finger
  10. Bake for 20-22 minutes
    1. Top should be set and edges slightly firm
    2. A toothpick or knife inserted in the center should come out clean, or with a few moist crumbs, but no batter
  11. Allow bars to cool in pan for at least 30 minutes
  12. Slice and serve
