Thai Beef Salad

  • garlic cloves
  • 1 jalapeno
  • lime
  • 1 1/2 T fish sauce
  • 2 T lemongrass paste
  • 1 1/4 t brown sugar
  • red chile flakes
  • 1/2 T vegetable oil
  • 1-inch-thick New York strip steak
  • 2 medium shallots
  • 1/4 cup fresh mint leaves
  • 1/4 cup cilantro
  • 2 T uncooked rice
  • Lettuce
  • Cherry Tomatoes


  1. Bring steak to room temp
  2. Mince the garlic and one of the chile halves and place in a small bowl
  3. Slice the remaining chile half into thin rings and add it to the bowl, along with the lime juice, fish sauce, lemongrass, brown sugar, and red chile flakes
    1. Will look like there’s not a lot of liquid, but there is
  4. Put rice in a small frying pan over medium heat
  5. Cook, stirring frequently, until the grains are toasted and golden
  6. Let cool then grind into a powder in a mortar and pestle or blender
    1. Lots of labor here, but it’s worth it
  7. S/P the steak
  8. Cook the steak in a skillet using the oil
  9. Allow it to rest, then slice against the grain thinly
  10. Chop shallots, mint, cilantro, and tomatoes
  11. Combine steak (w/ juices), shallots, mint, cilantro, dressing, tomatoes, and rice powder
