Moroccan-Spiced Chickpea Bowl

Ingredients:

  • 1 T olive oil
  • 1 large onion
  • 1 garlic clove
  • 1 T chili powder
  • 1 T cumin
  • 1 t turmeric
  • 1 t garam masala
  • dash of cinnamon
  • dash of cayenne (for heat)
  • 2 14 oz cans chickpeas
  • 2 14 oz cans fire roasted diced tomatoes
  • 2 cucumbers
  • 4-5 servings of cous cous
  • mint, parsley
  • greek yogurt or hummus
  • lemon juice
  • pita

Instructions:

  1. Chop onion and garlic, open up chickpeas and tomatoes
  2. Heat olive oil in a dutch oven
  3. Add union until softened
  4. Add garlic, spices, salt and chickpeas until fragrant
  5. Add tomatoes and simmer for 20 minutes (should still have a little liquid at the end)
  6. Chop cucumber (half-circles) and herbs, then mix
  7. Cook the cous cous
  8. Arrange bowls
