One Pot Spicy Sausage and Kale Soup (Reg and Crock Pot)

Ingredients:

  • 1 T Olive oil
  • 2 lbs spicy (or regular) Italian ground sausage
  • 1 large onion
  • 3 bell peppers
  • 2 garlic cloves
  • 4 cups beef broth
  • 2 (10 oz) can Rotel diced tomatoes with green chilis
  • 1 (16 oz) jar chunky salsa
  • 1 (16 oz) bag mixed frozen vegetables (corn, green beans, carrots)
  • 1 Tbsp Worcestershire sauce
  • 1 T Italian seasoning
  • (optional) 1 (7oz) can chopped Jalapeño
  • Splash of red wine vinegar
  • 2 cups O Organics baby kale leaves
 Instructions:
  1. Chop onion, bell peppers, and garlic
  2. Heat oil and cook sausage in a large soup pot
  3. Mix in onion, bell peppers, and garlic for about 4 min (until softened)
  4. Add the rest of the ingredients (including S/P), except vinegar and kale
  5. Bring to a boil and lower to a simmer for about 30 minutes (reduce to desired level)
  6. Add vinegar (little bit at a time) and adjust seasoning
  7. Add kale, cover, and let sit with no or low heat for about 10-15 minutes (breaks up the stems)

SLOW COOKER VERSION

  1. Follow steps 1 and 2
  2. Add everything (include S/P) except vinegar and kale
  3. Cook on low for 7 hours
  4. Add vinegar (little bit at a time) and adjust seasoning
  5. Add kale, cover, and let sit with no or low heat for about 10-15 minutes (breaks up the stems)
