Spicy Green Mexican Quinoa

  • 1 1/2 cups fresh spinach
  • cup cilantro
  • jalapeños (less and/or remove seeds for less heat)
  • 3 garlic cloves
  • Juice of 1 lime
  • 2 cups uncooked quinoa
  • 2 1/2 cups water


  1. Chop spinach, cilantro, jalapeño and garlic
  2. Add spinach, cilantro, jalapeño, garlic, lime juice and salt to quinoa and water in a sauce pan
  3. Bring to a boil and simmer 15-20 minutes
  4. Remove lid, fluff and let cool for ~5 min
