Chopped Thai Salad with Sesame Garlic Dressing

Ingredients:

  • 1/3 cup canola oil
  • 3 garlic cloves
  • 3 T low sodium soy sauce
  • 2 T water
  • 2 T white distilled vinegar
  • 2 T honey
  • 1 T sesame oil
  • 1 T lemongrass paste (ginger would also work)
  • 1 T lime juice
  • 16 ounces frozen shelled edamame
  • 6 cups kale
  • 3 carrots
  • 3 bell peppers
  • 1 cup cilantro
  • 3 green onions
  • most of 1 bag TJ’s Thai Lime and Chili cashews (or reg)

Instructions:

  1. Blend or mix canola oil through lime juice (chop garlic if mixing)
  2. Heat edamame and allow it to cool
  3. Chop kale, carrots, peppers, cilantro and green onions into thin strips or shreds
  4. Chop cashews
  5. Toss everything together
