Roasted Carrots

Ingredients:

  • 2 lbs carrots
  • 3 T olive oil
  • 1 t thyme
  • 1 t oregano
  • 3 T flat-leaf parsley

Instructions:

  1. Preheat oven to 400
  2. Peel and chop carrots into small 2 inch pieces
  3. Place carrots on a foil lined baking sheet and add oil, S/P, thyme and oregano
  4. Cover with foil and place in the oven for 30 minutes
    1. If not done, turn the heat down to 375 for another 10 min
  5. When done, add parsley
