White Bean Kale Salad

Ingredients:

  • 1 15-ounce can white beans
  • 3-4 lemons
  • 2 T olive oil
  • 1 T fresh parsley
  • 10 ounces kale
  • 2-3 T maple syrup
  • 2 garlic cloves
  • 1/3 cup tahini
  • Croutons, homemade or bought

Instructions:

  1. Chop parsley, garlic and kale
  2. Toss together drained beans with lemon juice (from 1 lemon), 1 T olive oil, salt and fresh parsley. Set aside
  3. Add kale to a large mixing bowl with lemon juice (from 1 lemon), 1 T olive oil, 1 T maple syrup, S/P and 1 minced garlic. Use your hands to massage the kale and break down its texture a bit
  4. To prepare the dressing, add tahini, remaining garlic, remaining lemon juice, remaining maple syrup, and S/P to a small mixing bowl. Whisk to combine, then add hot water to thin until pourable
  5. Combine everything and top with parmesan/croutons
