Asian Chicken and Quinoa

  • 1/3 cup chili garlic sauce (spicy) or 2 T sweet chili sauce (sweet)
  • 1/3 cup soy sauce
  • 1 T ginger
  • 2 T rice vinegar
  • juice of 1/2 lime (~2 T)
  • 3 garlic cloves
  • (optional) 2 T Hoisin Sauce
  • 1/4 cup Honey
  • 2 T Brown Sugar
  • 2 lbs boneless skinless chicken thighs
  • 2 cups uncooked quinoa
  • (optional) cornstarch
  • (optional) chopped peanuts, sesame seeds, cilantro, green onion, or chili flakes for topping


  1. Cook the quinoa
  2. Whisk together chili garlic sauce, soy sauce, ginger, rice vinegar, lime juice, minced garlic, hoisin sauce, honey, and brown sugar
    1. Do the honey/brown sugar last and taste as you add some at a time
  3. Heat a skillet and add some oil
  4. Season chicken with salt and pepper, then grill and remove
  5. Add the sauce mixture to the skillet (medium heat) until thickened
    1. Can add cornstarch to speed it up and retain more sauce
  6. Add chicken to the sauce and coat
  7. Serve chicken on top of the quinoa. Brush the whole thing with extra sauce and top with cilantro, peanuts, and chili flakes
