Slow Cooker Carnitas

  • 4-6 lbs pork shoulder
  • 1 T garlic powder
  • 1 T cumin
  • 2 t dried oregano
  • 2 t brown sugar
  • 1 t dried basil
  • (optional) 1 t ground coriander
  • 1 t chili powder (more for heat)
  • 1 t paprika
  • 2 oranges sliced in half
  • 1 lime sliced in half


  1. Combine garlic powder, chili powder, dried oregano, dried basil, cumin, ground coriander, brown sugar, and paprika
  2. Trim pork of excess fat
  3. Rub the spice mixture evenly over the pork and place in slow cooker
  4. Squeeze the juice from the oranges and limes over the pork and place rinds pulp side down in slow cooker over the meat
  5. Cook on low for 10-12 hours
  6. Preheat oven broiler and line a sheet pan with foil
  7. Shred the pork with a fork and place in a single layer on the sheet pan
  8. Place underneath broiler until tips of pork are browned and slightly crisp (3-5 min), adding some of the cooking juice to moisten if it becomes too dry
