Healthy Shepherd’s Pie with Sweet Potato Topping

  • 1 lb ground beef or turkey
  • 2-3 medium carrots
  • 1 green bell pepper
  • 1 small onion
  • 2 garlic cloves
  • 1/2 t dried rosemary
  • 3/4 t + 1/2 t chili powder (more for heat)
  • 3 oz tomato paste (about 6 Tbsp.) (such as Muir Glen)
  • 2 egg whites
  • 2 medium sweet potatoes, peeled and cubed (~3 ½-4 cups cubed)
  • 1 T coconut oil or butter or avocado oil (Primal Kitchen Foods)


  1. Preheat oven to 375 degrees
  2. Chop carrots, bell peppers, onion, and garlic
  3. Wash and dry the sweet potatoes, then bake
  4. Brown the meat in a skillet
  5. When partially browned, add carrots, bell peppers, onion, and garlic until carrot softened
  6. Once the carrots are soft, stir in tomato paste, egg whites, rosemary, 3/4 t chili powder, and S/P
  7. Mash the sweet potatoes with 1/2 t chili powder and salt
  8. Transfer the meat filling to a casserole dish and top with the Sweet Potato Mash
  9. Bake for 15 min
