Mexican Chicken Quinoa Casserole

Ingredients:

  • 1 2/3 cups uncooked quinoa
  • 1 14 oz can black beans
  • 1 1/2 cups salsa (16 oz jar)
  • 1 1/2 cups chicken broth
  • 1-2 garlic cloves
  • 1 1/2 cups shredded cheese
  • 1 T oil
  • 1 jalapeño (more for heat)
  • 1 onion
  • 4 bell peppers
  • 1 1/4 lbs boneless skinless chicken breasts
  • 1 T taco seasoning
  • (optional) cilantro

Instructions:

  1. Preheat oven to 375 degrees
  2. Chop garlic, jalapeno, onion, bell peppers, and chicken
  3. Mix the quinoa, black beans, salsa, chicken broth, salt, garlic, and 1/2 cup of the shredded cheese in a casserole dish and bake for 30 minutes
  4. Meanwhile, heat a the oil in a large skillet
  5. Add the jalapeño, onion, and peppers until golden brown
  6. Toss the raw chicken with the taco seasoning
  7. Stir the chicken well into the quinoa and bake another 30 minutes
    1. Can add another 1/2 cup chicken broth if dry
  8. When done, add pepper-mixture and cheese and put back in the oven to melt the cheese. Garnish with cilantro
