Green Goddess Quinoa Summer Salad

  • 2 cups cooked quinoa
  • 2 cups cherry tomatoes
  • 2 cups spinach leaves
  • 1/2 cup (or more, to taste) Magic Green Sauce
  • fresh Mozzarella cheese (can also use bagged)
  • (optional) a few handfuls of nuts
  • asparagus or zucchini
  • (optional) grilled chicken or other protein


  1. Cook the quinoa and allow it to cool
  2. Bake the asparagus or zucchini, then chop when cooled
  3. Halve the tomatoes and mozzarella
  4. Chop or crush nuts
  5. Toss everything together
