Detox Salad

Ingredients:

  • 2 cups kale
  • 2 cups broccoli florets
  • 2 cups brussels sprouts
  • 2 cups red cabbage
  • 1 cup carrots
  • ½ cup fresh parsley
  • ½ cup almonds
  • 1 to 2 Tbsp sunflower seeds
  • 3 T olive oil
  • ½ cup lemon juice (two lemons)
  • 1 T fresh ginger
  • 3 t Dijon mustard
  • 2 t honey (or maple syrup)

Instructions:

  1. Chop kale, broccoli, brussels, red cabbage, carrots, parsley and almonds
    1. This may take a while
  2. In a small bowl, whisk together olive oil, lemon juice, grated ginger, Dijon, and honey
  3. Combining into multiple bowls makes it easier to mix everything together
