Chopped Salad

Ingredients:

  • 3 sweet potatoes
  • 1 T olive oil
  • ~1 T cumin
  • ~1 T chili powder
  • (optional) cayenne
  • 14 oz can black beans
  • 14 oz can sweet corn
  • grape or cherry tomatoes
  • 2 romaine hearts
  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1 T Apple Cider Vinegar
  • 1 cup cilantro leaves and stems
  • 4 garlic cloves
  • lime juice
  • (optional toppings) hard boiled eggs, avocado, seeds/nuts

Instructions:

Tip: Can add rotisserie chicken, tofu, or extra beans for protein

  1. Preheat oven to 400
  2. Peel sweet potatoes and chop into bite-sized pieces
  3. Mix with olive oil, cumin, chili powder and S/P
  4. Bake for 10 minutes
  5. Shake the potatoes
  6. Increase heat to 425 and bake another 15 minutes
    1. Allow cooling time
  7. Blend avocado, yogurt, vinegar, cilantro, garlic, lime and some salt
  8. Toss the beans, corn, halved tomatoes, lettuce, sweet potatoes, and other optional toppings with the dressing
