Chinese Chicken Salad

  • wonton wrappers OR chow mein noodles
  • vegetable oil (if using wonton wrappers)
  • 1/3 cup vegetable oil
  • 1/3 cup unseasoned rice vinegar
  • 1 T Chinese hot mustard
  • 1 T light soy sauce
  • 1 T Sriracha
  • 1/2 T sesame oil
  • 1 T brown sugar
  • 1 T honey
  • 3 cloves garlic
  • 1/2 rotisserie chicken
  • 6 cups shredded cabbage or shredded romaine
  • 1 cup shredded red cabbage
  • 1 cup cilantro leaves
  • 3 carrots
  • 1/2 cup thinly sliced red onion
  • 4 or more scallions


Tip: Skip to step 5 if using chow mein noodles

  1. Stack wonton wrappers and slice into 1/2 inch strips
  2. Heat 2-3 inches of vegetable oil in a saucepan, until a wrapper sizzles on contact
  3. Working in batches, drop a handful of wonton strips into the oil and fry until puffed and lightly golden
  4. Transfer the fried strips to paper towels and sprinkle generously with salt until done
  5. Blend vegetable oil (the 1/3 cup), rice vinegar, hot mustard, soy sauce, Sriracha, sesame oil, brown sugar, honey, garlic and salt
  6. Discard chicken skin and shred by hand
  7. Place the meat in a bowl with the cabbage, cilantro, red onion, and scallions
  8. Pour in 1/2 cup of the dressing, toss to coat, and top with the wontons
