  • 3 lbs chuck roast
  • 4 garlic cloves
  • 2 chipotles in adobo sauce (or more to taste)
  • 1 4 or 7 oz can chopped green chiles
  • 1 15oz can corn
  • 1 small white onion
  • 1/4 cup lime juice
  • 2 T apple cider vinegar
  • 3 bay leaves
  • 1 T ground cumin
  • 1 T dried oregano
  • 1/2 cup beef broth or water


  1. Chop garlic, chipotles and onion
  2. Chop roast into 2-inch chunks and trim excess fat
  3. Combine all ingredients in the bowl of a slow cooker and toss
  4. Cook on low for 7-8 hours
  5. Remove bay leaves
  6. Using two forks, shred the beef and cover for another 10 minutes
  7. (optional) preheat broiler
  8. (optional) place beef on a foil lined baking sheet and put in broiler until crisp
