Coconut Lime Quinoa

Ingredients:

  • 2 cups coconut milk
  • 1 cup quinoa
  • 2 limes, juice + zest

Instructions:

  1. Add coconut milk, quinoa and lime juice to a small sauce pan
  2. Bring to a boil, cover and reduce to simmer until all the liquid has been absorbed (12-15 min)
  3. Remove from the heat, stir and let cool
  4. Stir in lime zest
