Nanaimo Bars

Ingredients:

  • 1 cup Graham Cracker crumbs (about 1/2 sleeve)
  • 1/2 cup sweetened, shredded Coconut
  • 1/3 cup finely chopped Walnuts
  • 1/4 cup Cocoa Powder
  • 1/4 cup Granulated Sugar
  • 1/3 cup + 1/4 cup melted, unsalted Butter
  • 1 T unsalted Butter
  • 1 beaten Egg
  • 2 T Custard or Jell-O Vanilla Pudding Powder
  • 1/2 t Vanilla Extract/Flavoring
  • 2 cups Icing/Powdered Sugar
  • 2 T + 1 t Milk
  • 4 oz semisweet Chocolate Chips

Instructions:

Part 1:

  1. Preheat oven to 350
  2. In bowl, stir together graham crumbs, coconut, walnuts, cocoa powder, sugar, 1/3 cup melted butter and egg
  3. Press into parchment paper lined square cake pan and bake 10-12 minutes
  4. In another bowl, beat together butter, custard powder and vanilla
  5. Beat in icing sugar alternately with milk and store until chocolate base cools
  6. Spread over chocolate base and let cool 1 hour

Part 2:

  1. Melt chocolate with butter using a heatproof bowl over boiling water
  2. Spread over custard and refrigerate another hour
