Crock Pot/Regular Chicken Adobo

Ingredients:

  • 3-4 lb Chicken Thighs, skins removed (can also use breasts or cubed pork)
  • 1/2 cup Vinegar (White Distilled or White Wine)
  • 1/2 cup Soy Sauce
  • 6 minced Garlic cloves
  • 1 T Pepper
  • 2-3 Bay Leaves
  • 1 Onion, thinly sliced
  • 1-2 T ground Ginger (can also use thick pieces, just remove before serving)
  • 1 T Sugar
  • (optional) 2 potatoes

Instructions #1:

  1. Chop onions, garlic and potatoes (1-inch cubes)
  2. Place the onions, garlic, ginger and bay leaves (remember how many) in slow cooker
  3. Arrange chicken and potatoes on top
  4. Whisk soy sauce, vinegar, sugar and pepper and add to slow cooker
  5. Cook for 6 hours on low
  6. Remove and discard the ginger pieces (if used) and bay leaves

Instructions #2:

  1. Chop onions, garlic and potatoes (1-inch cubes)
  2. Combine all of the ingredients except chicken and potatoes in a dutch oven
  3. (optional) Let sit 15 minutes
  4. Bring to a boil then reduce heat to low
  5. Add chicken and potatoes
  6. Simmer for 1 1/2 – 2 hours (leave lid ajar), until potatoes and chicken are done
  7. Remove lid and cook 10 minutes more
