Rosemary and Garlic Roast Beef

  • 3 lb Prime Rib Roast, Sirloin Tip Roast, or Tri-Tip Roast
  • 1 bunch Rosemary
  • 12 Garlic cloves
  • Salt/Pepper
  • 4 T Olive Oil
  • 4 T Unsalted Butter
  • 4 cups chopped Mushrooms
  • 1 cup Beef Stock


  1. Preheat oven to 390 degrees and take roast out of the fridge
  2. Chop garlic and rosemary, then combine in a bowl with 2 T’s oil
  3. Cut the roast into 2-3 equal pieces (depending on the size) and pat dry with paper towels
  4. Season all sides with S/P
  5. Heat up 2 T olive or grapeseed oil in a cast iron
  6. When hot, add roast and sear all sides
  7. After 1 minute on the last side, remove from heat and brush on the garlic/rosemary mixture
  8. Put the roast in the oven for 25 minutes
  9. Flip the roast and spoon over the oil/garlic/rosemary from the pan a few times
  10. Return for another 10-15 minutes, until meat is 145 degrees
  11. Allow to rest before slicing
