Ingredients:
- 1.5 – 2 lb boneless, skinless Chicken Breasts or fillets
- Flour
- 3-4 Eggs
- 1 T dried Basil
- (optional) 2/3 cup grated Parmesan
- 1/2 loaf of Sourdough bread or regular Breadcrumbs
Instructions:
Tip: Make breadcrumbs ahead
- Preheat oven to 350 degrees
- Pulse pieces of sourdough in a food processor or blender until you get a mix of big and small pieces
- Place on a foil-lined baking sheet and drizzle with some oil (not from the 6 T) and S/P
- Bake for 15-20 minutes, until golden, then allow to cool
- Increase heat to 415 degrees
- Get 3 bowls, 1 for flour, 1 for the eggs (beaten) and 1 for breadcrumbs/basil/cheese
- Dunk chicken, 1 at a time, in flour, then eggs, then breadcrumbs
- Place on a foil-lined baking sheet and put in oven for 25 minutes
