Breaded Chicken Breasts

Ingredients:

  • 1.5 – 2 lb boneless, skinless Chicken Breasts or fillets
  • Flour
  • 3-4 Eggs
  • 1 T dried Basil
  • (optional) 2/3 cup grated Parmesan
  • 1/2 loaf of Sourdough bread or regular Breadcrumbs

Instructions:

Tip: Make breadcrumbs ahead

  1. Preheat oven to 350 degrees
  2. Pulse pieces of sourdough in a food processor or blender until you get a mix of big and small pieces
  3. Place on a foil-lined baking sheet and drizzle with some oil (not from the 6 T) and S/P
  4. Bake for 15-20 minutes, until golden, then allow to cool
  5. Increase heat to 415 degrees
  6. Get 3 bowls, 1 for flour, 1 for the eggs (beaten) and 1 for breadcrumbs/basil/cheese
  7. Dunk chicken, 1 at a time, in flour, then eggs, then breadcrumbs
  8. Place on a foil-lined baking sheet and put in oven for 25 minutes
