Crock Pot Chicken Tikka Masala

Ingredients:

  • (optional) 1/2 -1 T unsalted butter
  • 1 T olive oil
  • 1 (15 oz) can Crushed Tomatoes
  • 1 Onion
  • (optional) 1-2 fresh green chile
  • 3-4 Garlic cloves
  • 2 T Tomato Paste
  • 2 1/2 t Garam Masala
  • 1/2 – 1 t chili powder
  • 2 t turmeric
  • 1 t ground cumin
  • 1 T brown sugar
  • Salt/Pepper
  • 1 1/2 lb boneless, skinless Chicken Thighs (about 8)
  • 1-2 Cucumbers
  • 1 bunch Cilantro
  • 1 T Lemon juice
  • cup Basmati or other White Rice
  • 1/3 cup Heavy Cream

Instructions:

  1. Chop onion, chile, and garlic
  2. Add olive oil, butter, tomatoes, onion, garlic, tomato paste, seasonings and S/P to the slow cooker
  3. Place the chicken on top of the onion/tomatoes, cover and cook on low for 7 hours
  4. Chop cucumber (halved lengthwise and thinly slice horizontally) and cilantro
  5. In a small bowl, toss the cucumber and most of the cilantro with the lemon juice and S/P
  6. 20 minutes before serving, cook rice
  7. Just before serving, stir in cream and allow to warm gently
  8. Top with cilantro
