Coconut Rice

  • 1/2 cup unsweetened shredded Coconut (optional)
  • 1 1/2 cups Jasmine Rice
  • 1 (14 oz) can Coconut Milk
  • 1/8 cup Sugar
  • Salt


Tip: Toast coconut ahead

  1. Preheat oven to 350 degrees
  2. Toast coconut on a foil-lined baking sheet until lightly brown, 7-10 minutes
  3. In a pot, combine rice, coconut milk, 1 3/4 cup water (or just fill the coconut milk can), sugar and salt
  4. Bring to a boil, then simmer on low heat and cover about 20 minutes
  5. Remove from heat, fluff rice and cover another 5 minutes
  6. Top with or mix in toasted coconut
