Slow Cooker Chicken Tortilla Soup

Ingredients:

  • 1.5-2 lb Chicken Breasts
  • 1 T Chili Powder
  • 1 T Cumin
  • Salt/Pepper
  • 1 Onion
  • 2 Bell Peppers
  • 1 (28 oz) can Diced Tomatoes with juices
  • 1 can Rotel
  • 3 cups low sodium Chicken Broth (adjust to your preference)
  • 4 oz Tomato Paste
  • 2-3 T Chipotle Peppers in Adobo (1 for mild)
  • 1 (15 oz) can Black Beans, drained and rinsed
  • 1 (15 oz) can fire-roasted Corn
  • 2 Limes, juiced
  • Tortilla Chips
  • Cilantro (optional)
  • shredded Cheese (optional)

Instructions:

  1. Place the chicken in the slow cooker
  2. Chop onion and bell peppers
  3. Add and mix all ingredients through the corn
  4. Cook on low for 8 hours
  5. Shred chicken
  6. Stir in lime juice
  7. Add tortilla chips, cilantro and cheese
