Pasta Carbonara

  • 1 lb any Pasta
  • 8 pieces Thick Cut Bacon (diced Small)
  • 1 Onion
  • 2 Garlic cloves
  • 3 Eggs
  • 3/4 cup Finely Grated Parmesan
  • 1/2 cup Heavy Cream
  •  Salt/Pepper
  • 1/2 cup Peas


  1. Cook pasta according to package directions
  2. Meanwhile, chop onion and garlic
  3. Fry bacon, drain on paper towels and crumble when cooled
  4. Pour off most of the bacon grease, but don’t clean the pan
  5. Add onions and garlic until golden brown
  6. Mix together beaten eggs, Parmesan, cream and S/P in a separate bowl
  7. When the pasta is done, reserve a cup of the pasta water
  8. Drain the pasta and immediately add the egg mixture, stirring the whole time
  9. The sauce will thicken and coat the pasta. Splash in some pasta water if needed
  10. Add the peas, bacon and onion/garlic
