Thai Basil (Pad Grapow Gai)

  • 2 lb Ground Chicken
  • 4-5 shallots
  • 7 Garlic cloves
  • (optional) 2-5 Thai chiles, Serrano Chiles, or Jalapeños (depending on heat preference)
  • 3 T Oyster Sauce (or 2 T Fish Sauce)
  • 4 T Soy Sauce
  • 1 T brown sugar or honey
  • 2 T Vegetable or Olive Oil
  • 1/3 cup chicken broth
  • 1 bunch Thai or regular Basil
  • cooked Rice


  1. Cook Rice
  2. Chop garlic, shallots, and chiles (keep most of the seeds for heat if wanted)
  3. Heat oil in a pan
  4. Add garlic, shallots, and chiles for 1 minute
  5. Add the chicken and S/P until done
  6. Add sugar, soy sauce, and oyster sauce (or fish sauce instead of oyster)
  7. Deglaze with the chicken broth
  8. Add basil until wilted (about 30 seconds)
  9. Serve over rice
