Pesto Pasta with Tomatoes and Chicken


  • 1 lb Chicken Breasts
  • 3 T Olive Oil, divided
  • Salt/Pepper
  • 1 lb any pasta
  • 1 container Grape Tomatoes (or Cherry Tomatoes)
  • 4 Garlic cloves
  • 1/3 cup Pesto
  • Parmesan cheese


Tip: Make pesto and chicken ahead

  1. Cook pasta according to instructions on package
  2. Heat 1 T oil and cook chicken, then remove
  3. Add tomatoes and S/P until skin softens, about 10 minutes
  4. Add garlic another minute, then remove from heat
  5. Combine pesto, parmesan, tomatoes, pasta and chicken (chopped)
