Crock Pot Chickpea Coconut Curry With Sweet Potatoes

Ingredients:

  • 1 t Olive Oil
  • 1 Onion
  • 3 Garlic cloves
  • 1 T ground Ginger
  • 1 (15 oz) can Chickpeas
  • 2 cups (16 oz) canned chopped Tomatoes, slightly drained
  • 2 cups Cauliflower florets (1 big head)
  • 1 large Sweet Potato
  • 1 (15 oz) can light Coconut Milk
  • 1 cup Vegetable or Chicken Broth
  • 1 T Garam Masala (or curry powder)
  • 1 T Curry Powder
  • Salt/Pepper
  • (optional) 2 cups Spinach

Instructions:

  1. Chop onion, garlic, cauliflower, sweet potato (peeled, 1 inch pieces)
  2. Place everything except the spinach in a big bowl to mix, then add to slow cooker
  3. Cook on low for 6 hours
  4. Stir in spinach until wilted before serving
