Chipotle-Honey Chicken

  • 1 (7 oz) cans Chipotle Chilis in Adobo (Add more for heat)
  • 1 1/2 cup BBQ Sauce
  • 1/2 cup Brown Sugar
  • 1/3 cup Bourbon or Whiskey
  • 20 Garlic cloves
  • juice of 3 Limes
  • Salt/Pepper
  • 4 bone-in, skin-on Chicken Thighs
  • 4 bone-in, skin-on Chicken Drumsticks
  • (Can also use 1.5-2 lbs Chicken Breast instead of thighs/drumsticks)
  • 3-4 T Honey


Tip: Make marinade ahead (make more and freeze), marinade chicken the night before

  1. Blend chipotles, BBQ sauce, brown sugar, bourbon, garlic, lime and S/P juice until smooth, about 30 seconds
  2. Place 2 cups in a gallon ziplock bag with chicken and mix
  3. Refrigerate 2-24 hours
  4. Preheat oven to 375 degrees and line a baking sheet with foil
  5. Bake the chicken on the baking sheet until almost cooked through and edges are beginning to char (about 30 minutes for thighs/drumsticks, 20 minutes for breasts)
  6. Brush chicken with the remaining 1/2 cup chipotle sauce and drizzle with honey
  7. Return to the oven until cooked through, about 10 minutes
    1. (Optional) Take the chicken out 5 or so minutes early and finish it in the broiler for more char
