Roasted Chicken

  • 1 (3-5 lb) Whole Chicken
  • 3-4 T unsalted Butter or Olive Oil (or mixture)
  • 1 head + 3 cloves of Garlic
  • 1 bunch of Thyme
  • 1 bunch of Rosemary
  • 1 Lemon


  1. Preheat oven to 390 degrees
  2. Chop the 3 cloves of garlic, a few sprigs of thyme and a few of rosemary
  3. Melt the butter and mix in the garlic, thyme and rosemary
  4. Chop the head of garlic and lemon in half, remove
  5. Remove giblets from chicken (usually already in a bag)
  6. Rinse chicken inside and out and pat dry with paper towels
  7. Season the inside of the chicken with S/P
  8. Stuff the cavity with the garlic head, thyme, rosemary and lemon halves
  9. Brush the outside of the chicken with the butter mixture and S/P
    1. Or under the skin
  10. Place chicken in a roasting rack upside down and bake until juices run clear (165 degrees)
    1. 5 lbs took 1 1/2 hours at 390 degrees
  11. Cover with foil and allow to cool
