Hasselback Potatoes

  • 4 (1 1/2 lb) medium Russet (Idaho) Potatoes
  • 6 T melted, unsalted Butter
  • 1/2 cup Olive Oil
  • 2 T chopped Thyme
  • Salt/Pepper
  • Parmesan


  1. Preheat oven to 400 degrees
  2. Place potatoes horizontally in front of you and place a pair of chopsticks behind one
  3. Slice potatoes into 1/8 inch slices, using the chopsticks as a stopper
  4. Arrange on a foil-lined baking sheet
  5. Mix butter, oil and thyme
  6. Drizzle 1/2 of the butter mixture on the potatoes, into the crevices
  7. Bake 30 minutes
  8. Drizzle more of the butter mixture (keep about 1 T per potato)
  9. Bake until crisp, about another 30 minutes
  10. Top with Parmesan and remaining butter mixture
