Roast Chicken Sandwich with Chipotle Mayonnaise and Sun-dried Tomatoes

Ingredients (Sandwich):

  • Roasted Chicken or sliced (can use turkey, too)
  • Baguette or Sandwich Bread
  • Shaved Parmesan
  • 1/2 cup Sun-dried Tomatoes, drained
  • 1 bunch Arugula or Watercress
  • 1/4 cup Mayonnaise
  • 1 T Chipotle Chilis in Adob0


Tip: Make chicken ahead and use leftovers for the sandwich

  1. Combine mayonnaise and chilis in a small bowl
  2. Cut baguette in half lengthwise without cutting all the way through
  3. Press bread open and spread chipotle mayonnaise on each side
  4. Top with parmesan, watercress, chicken, chopped sun-dried tomatoes and S/P
