Chili Lime Chicken

  • 2-2.5 lb Chicken Thighs
  • 4 Limes, juice and zest
  • 1/4 cup Olive Oil
  • 4-5 T Cilantro
  • 1 Jalapeño, keep seeds for heat
  • 6 Garlic cloves
  • 1.5 T Honey
  • 2 t Salt
  • 1 T Chili Powder


  1. Chop cilantro, jalapeño and garlic
  2. Combine lime juice, lime zest, oil, cilantro, jalapeño, garlic, honey, salt and chili powder
  3. Place in a ziplock bag with chicken for 2-8 hours
  4. Heat a pan on the stove
  5. Remove chicken, but allow oil to mostly drain back into the bag before placing in pan
    1. Try to add the bits of garlic and jalapeño to the pan as well
  6. Cook until done
