Kale And Arugula Salad with Feta

Ingredients:

  • 1 bag Kale
  • 1 bunch Arugula
  • 3 Shallots
  • Feta cheese
  • Toasted Almonds
  • Salt/Pepper
  • 1 big Lemon, zest and juice
  • 1 T Dijon Mustard
  • 2.5 T Champagne or White Wine Vinegar
  • 1-2 T Honey
  • 4-5 T Olive Oil
  • 1/2 loaf of Sourdough bread or regular Breadcrumbs

Instructions:

Tip: Make dressing and breadcrumbs ahead

  1. Preheat oven to 350 degrees
  2. Pulse pieces of sourdough in a food processor or blender until you get a mix of big and small pieces
  3. Place on a foil-lined baking sheet and drizzle with some oil (not from the 6 T) and S/P
  4. Bake for 15-20 minutes, until golden
  5. Meanwhile, mix lemon zest, lemon juice, mustard, vinegar, honey and oil
  6. Toast almonds in a pan
  7. Chop shallots into small rings, then in half
  8. In a salad bowl, combine kale, arugula, feta, shallots, almonds and breadcrumbs
  9. When ready, add dressing (start with 1/2-2/3 and add more if wanted)
