Baked Pasta

  • 2 T Olive Oil
  • 5-6 Garlic cloves
  • 1 Onion
  • 1 lb ground Italian Sausage (regular or spicy)
  • 1 can (14.5 Ounce) San Marzano Tomato Sauce Or Marinara Sauce
  • 1-2 cups Red Wine
  • 2 T Italian Seasoning (Oregano and Thyme)
  • 1 T Red Pepper Flakes
  • Salt/Pepper
  • 1 lb Pasta (Lasagna noodles, Rigatoni, Ziti Or Mostaciolli)
  • 1 (15 oz) tub Ricotta
  • 1 big bag of grated Mozzarella
  • 1/2 cup Parmesan
  • 1 Egg
  • 1 bunch of Parsley


Tip: Make ahead and freeze in pieces

  1. Cook pasta until it is a little harder than al dente
  2. Heat oil in a dutch oven and chop onion/garlic
  3. Add onions and garlic for about 5 minutes (onions begin to soften, not brown)
  4. Add ground meat and cook until browned (break it up a ton)
  5. Add tomato sauce, wine, seasonings, S/P and red pepper flakes
  6. Simmer 25 minutes (until it reaches your desired thickness)
    1. When done, add 1/2 of the parsley and remove about 3-4 cups to cool
  7. Preheat oven to 375-400 degrees
  8. In a separate bowl, mix (not completely) ricotta, mozzarella, parmesan, egg and S/P
  9. Mix in the pasta and cooled tomato sauce
  10. Add half the pasta mixture to a casserole dish
  11. Spoon half remaining sauce on
  12. Add the rest of the pasta
  13. Add the rest of the sauce
  14. Top with more cheese
  15. Bake until bubbling, about 20 minutes
  16. (Optional) Throw it in the broiler for 1-2 minutes for a crispier top
