Greek Salad

  • 1 Cucumber, sliced into 1/4 rings
  • 2 Bell Peppers, diced
  • 1 pint Cherry or Grape tomatoes, halved
  • small Red Onion, sliced into half rings
  • 1/2 lb Feta, diced (or crumbled)
  • 1/2 cup Calamata Olives, pitted
  • 3 minced Garlic cloves
  • 2 t dried Oregano
  • juice of 1 Lemon
  • 1/2 t Dijon (optional)
  • 1/4 cup Red Wine Vinegar
  • Salt/Pepper
  • 1/2 cup Extra Virgin Olive Oil


  1. Chop and combine cucumber, bell peppers, tomatoes and onion
  2. In a separate container, whisk garlic, oregano, lemon juice, dijon, vinegar and S/P
  3. Slowly whisk in EVOO to create an emulsion
  4. Pour over veggies and add feta/olives
  5. Allow to sit 30 minutes for flavors to settle
