Cardamom Oat Crumble

Ingredients:

  • 1 cup Flour
  • 1 1/2 cups Old Fashioned Oats (or quick cooking)
  • 1/4 cup Sugar
  • 2/3 cup Brown Sugar
  • 1/2 cup chopped Candied Ginger
  • 1 heaping t Cardamom
  • 1/2 t Cinnamon
  • 1/4 t Salt
  • 12 T unsalted Butter, melted
  • 4 cups frozen Cherries
  • 2 cups frozen Strawberries
  • 1 cup frozen Blackberries
  • 1 cup frozen Blueberries
  • 1 sliced Apple
  • zest and juice of 1/2-1 Orange
  • 1/4 cup Sugar
  • 4 T Cornstarch

Instructions:

  1. Preheat oven to 375 degrees
  2. Mix flour, oats, 1/4 cup sugar, brown sugar, candied ginger, cinnamon, salt, and cardamom in a large bowl
  3. Add melted butter and stir. Set aside
  4. Butter a cast iron pan
  5. Mix together fruits, orange zest/juice, 1/4 cup sugar and cornstarch
  6. Fill cast iron with fruit mixture
  7. Pour oat topping on top and spread to cover the fruit
  8. Bake 45-50 minutes (fruit bubbling, syrup thick, oats browning)
  9. Let cool 30 minutes
  10. Serve with ice cream
