Breakfast Burritos

Ingredients (makes 15):

  • 1.5 dozen Eggs
  • 1 package Turkey Bacon or regular Bacon, cut in half (about 40 pieces)
  • 1 bag Frozen Hash Browns or Potatoes O’Brien
  • about 15-20 tortillas
  • Salsa (bought or homemade)
  • 1 bag shredded Cheese

Instructions:

  1. Preheat oven to 400 degrees
  2. Soak and dry potatoes
  3. Place bacon on a foil lined baking sheet and roast for 15-20 minutes (flip regular bacon)
  4. Heat oil in a pan and add hash browns for 15 minutes, flipping once or twice
  5. Scramble and cook the eggs
  6. Microwave 6 tortillas at a time in a damp paper towel for 30-60 seconds
  7. Assemble the burritos
  8. Wrap in plastic wrap, store in freezer and microwave when ready
