Tri Tip

  • 2 lb Tri-Tip (Whole)
  • Any Beef Rub (recipe)
  • 1 T Grape Seed Oil (or 2 T of the same oil)
  • 1 T Olive Oil


  1. Trim some fat off the tri-tip if there’s too much, but be sure to leave a decent amount
  2. Massage rub liberally on the tri-tip and refrigerate for 1-24 hours
  3. Remove from fridge for 30 minutes and pat lightly to dry if moist (don’t remove the rub)
  4. Preheat oven to 350 degrees
  5. Sear all but one large edge of the tri-tip in a cast iron or grill pan with oil
  6. Sear the remaining edge only slightly and place in oven for 10 minutes/lb, until 130-135 degrees
  7. Let sit before slicing
