Southwestern Fiesta Chicken

  • 1 cup White Rice
  • Salt
  • 2 Limes, juiced
  • 4-5 T Cilantro
  • 1 1/2 lb Chicken Breast
  • 1 envelope taco seasoning
  • 2 T Olive Oil
  • 1 Onion
  • 2-3 Bell Peppers
  • 1 can Corn (drained if using canned)
  • 6 Garlic cloves
  • 1 (14 oz) can Black Beans, drained
  • 1 (10 ounce) can Ro-Tel Diced Tomatoes and Green Chilis, drained
  • (optional) 1 avocado


Tip: Make it all ahead of time. This makes a lot of food

  1. Chop cilantro
  2. Combine rice, water, some salt, lime juice and most of the cilantro to a pot and bring to a boil, then simmer 14 minutes and set aside
  3. Cut chicken into small pieces and season with half the taco packet
  4. In a dutch oven, heat oil and cook chicken, then remove
  5. While chicken cooks, chop onion and bell peppers
  6. Add onion, bell pepper, corn and remaining taco seasoning until onions start to brown
  7. Decrease heat to low and add garlic for 1 minute
  8. Add beans, tomatoes, rice, chicken and remaining cilantro
  9. Top with avocado
