Honey-Lime Sweet Potato, Black Bean and Corn Tacos

Ingredients:

  • 1 1/2 lb sweet potatoes
  • 4 T Olive Oil
  • 2 t Cumin
  • 2 t Paprika
  • 1/2 t Coriander
  • 1/2 t Cayenne
  • Salt/Pepper
  • 1 Onion
  • 3 Garlic cloves
  • 1 (14 oz) can black beans, drained
  • 1 can Corn, drained
  • 3 T Honey
  • 4 T Lime Juice
  • 3-4 T Cilantro
  • Corn Tortillas
  • Any taco toppers (lettuce, sour cream, guacamole, cheese)

Instructions:

Tip: Make ahead of time and microwave when making the tacos

  1. Preheat oven to 425 degrees
  2. Chop sweet potatoes into SMALL cubes
  3. Line baking sheet with foil and coat sweet potatoes with 3 T oil, cumin, paprika, coriander, cayenne and S/P
  4. Bake 15-20 minutes, tossing once or twice
  5. Chop onion and garlic
  6. Heat 1 T oil and add onion until caramelized (5-6 minutes)
  7. Add garlic for the last minute
  8. Reduce heat and add beans, corn, honey, lime juice, cilantro and sweet potatoes
  9. Microwave up to 6 tortillas at a time for 30 seconds while wrapped in a slightly damp paper towel
