Thai Kitchen Green Curry with Chicken

Ingredients:

  • 1 14 oz can Coconut Milk
  • 1/3 cup Vegetable or Chicken Stock
  • 2-3 T Fish Sauce
  • 3-4 T Green Curry Paste
  • 2 T Brown Sugar
  • 1 lb Chicken Breasts
  • 2 Bell Peppers
  • 3 Carrots
  • Mushrooms
  • Bean Sprouts
  • Cilantro
  • Thai Basil (regular works too)
  • (optional) Zucchini, Snap Peas

Instructions:

Tip: Cook chicken cubes, bell peppers, carrots and mushrooms ahead

  1. Cut chicken into cubes and cook, then set aside
  2. Chop bell peppers, carrots and mushrooms
  3. Cook these as well and place with chicken
  4. Mix coconut milk, stock, fish sauce, green curry paste and brown sugar in a pan
  5. Bring to a boil, then simmer for 15 minutes
  6. Stir in chicken cubes, bell peppers, carrots and mushrooms
  7. Serve over rice and top with bean sprouts, cilantro and thai basil
