Garlicky Kale Salad

  • 1 bunch/bag of Kale
  • 1 head of Garlic (or about 10 cloves)
  • 1/4 cup Tahini
  • 2 T Olive Oil
  • juice of 2 Lemons (about 1/3 cup)
  • 1 T Maple Syrup or Honey
  • Salt/Pepper
  • Hot Water to thin (optional)


Tip: Make the dressing ahead (steps 1-4 and 6)

  1. Preheat oven to 375 degrees
  2. Place garlic (skins on) on a foiled baking sheet
  3. Drizzle garlic with some oil (not from the 2 T in the ingredients) and bake for 20 minutes
  4. Squeeze garlic out of the skin once cooled
  5. Dress kale with 1 T lemon juice and 1 T oil
  6. Meanwhile, add all remaining ingredients and garlic to a bowl and whisk (smashing garlic in the process)
  7. Top kale with dressing and serve
