Easy Chicken Couscous

Ingredients:

  • 2 T Olive Oil
  • 6 cups Mirepoix (2 cups Onion, 2 cups Carrots, 2 cups Celery)
  • Salt/Pepper
  • 4 Garlic cloves
  • 1 1/3 cups Israeli (Pearl) Couscous
  • 2 cups Chicken Broth
  • .75 – 1 lb Chicken Breast
  • (optional) Thyme, Rosemary, Paprika

Instructions:

Tip: Cook chicken and chop mirepoix/garlic ahead of time.

  1. Chop mirepoix and garlic
  2. Heat oil in a Dutch oven
  3. Add mirepoix, season with S/P and sauté 5-10 minutes (until softened)
  4. Cook chicken separately if not already done, then chop and set aside
  5. Add garlic to mirepoix until fragrant (about 1 minute)
  6. Stir in couscous, chicken broth and seasonings
  7. Reduce heat to low and simmer while covered 8-10 minutes, stirring a few times (until broth is absorbed)
  8. Add chicken
